Coffee & History
This recipe creates vibrant iced coffee using the NextLevel Pulsar no-bypass brewer with a short bloom technique and Fellow Ode 2 grinder, featuring controlled extraction through valve steeping and partial flow release.
Ingredients
- 20g coffee (Fellow Ode 2 at setting 4 - 600μm)
- 240g filtered water at 93°C
- 60g ice (made from filtered water)
Equipment Setup
- Rinse filter with valve closed, drain
- Add 20g coffee, dry WDT to level bed
Brewing Steps
1. Short Bloom (0:00-0:30)
- Close valve, add shower screen
- Pour 60g water (3:1 ratio with 20g coffee)
- Remove screen, gentle wet WDT to saturate
- Swirl to level bed
- Open valve fully to drain - finish by 0:30
2. First Pour (0:30-1:45)
- Close valve, add shower screen
- Pour to 150g total (add 90g)
- Remove screen, swirl to level bed
- Open valve partially (1-2 o’clock position) until almost drained
3. Final Pour (1:45-finish)
- At 1:45, close valve
- Pour remaining water to 240g total (add 90g)
- Swirl to level bed
- Open valve to same partial position
- Let drain completely
4. Chill & Serve
- Add 60g ice to brewed coffee
- Stir until cooled to 5-10°C
- Pour over fresh ice cubes
Notes
- Final ratio: 20g coffee : 240g water : 60g ice (1:12 brew ratio, 1:15 final ratio with ice)
- Total brew time: ~3:30-4:00 minutes
- Grind adjustment: If brew tastes muted, go coarser (toward 4.5-5). If too weak, go finer (toward 3.5)
- Key techniques: Short bloom for clarity, partial valve opening for control, swirling with valve closed for even extraction
